Air Fryer Pistachio Crusted Miso Black Cod

Pistachio Crusted Miso Black Cod is an easy air fryer recipe featuring buttery sablefish with a savoury miso glaze and crunchy pistachio topping.

Ingredients
  

  • 2 tbsp miso paste any kind, I use white
  • 1 tbsp honey
  • 1 tbsp mirin
  • 1 tsp light soy sauce
  • 1 tbsp mayonnaise regular or kewpie
  • 1 tsp ginger grated
  • 1 tsp neutral oil
  • 4 black cod fillets 150-170g each
  • cup unsalted pistachios unsalted, finely chopped
  • sesame seeds and green onions garnish, optional

  • Air Fryer
  • Small Bowl
  • Box grater
  • Cutting board
  • Knife

Method
 

  1. Lightly brush or rub a small amount of neutral oil onto the air fryer basket or liner to prevent sticking. Preheat your air fryer to 375°F (190°C) for 3 minutes.
  2. In a small bowl, mix together white miso, honey, mirin, light soy sauce, mayonnaise and grated ginger until smooth.
  3. Pat the black cod fillets dry with paper towel. Brush the miso glaze generously over the top of each fillet. Press finely chopped pistachios onto the glaze to form a crust.
  4. Place the fillets, skin side down, in the air fryer basket, leaving space between each piece. Air fry for 8–10 minutes, depending on thickness. The fish should flake easily with a fork and the pistachios should be lightly toasted.
  5. Remove from the air fryer. Enjoy with steamed rice and vegetables. Optional, garnish with sliced scallions and sesame seeds before serving.

Notes

  • Salmon works well as a substitute if black cod is unavailable.
  • Maple syrup or brown sugar can replace honey.
  • Almonds or cashews can be used instead of pistachios.
  • Omit ginger for a milder, kid-friendly flavour.
  • Use tamari instead of soy sauce for a gluten-free option.
  • If you don't have mirin, substitute with rice vinegar and a pinch sugar.
