Black Sesame Caramel Cornflakes

Black Sesame Caramel Cornflakes are an addictive snack that has the nutty richness of black sesame seeds with the sweet, buttery crunch of caramel-coated cornflakes.

Ingredients
  

Caramel

  • 1 cup sugar 200g
  • 5 tbsp unsalted butter 85g
  • ½ cup cream 120mL
  • pinch salt

Remaining Ingredients

  • 2 cups Cornflakes
  • 2 tbsp caramel
  • ½ tsp black sesame seeds toasted

Instructions
 

Prepare the caramel

  • In a medium sauce pan, heat sugar (avoid using nonstick) over medium heat, stirring constantly with a high heat-resistant silicone spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid, about 5 minutes. Be careful not to burn it.
  • Stir in butter 1 tbsp at a time until melted and combined. Be careful in this step because the caramel will bubble rapidly when the butter is added. If you notice the butter separating or if the sugar clumps up, remove from heat and vigorously whisk to combine it again.
  • While stirring constantly, pour in the heavy cream slowly. The mixture will rapidly bubble. After you add all the heavy cream, do not stir and allow to boil for 1 minute. It will rise in the pan as it bubbles. 
  • Remove from heat and add a pinch of salt. Pour into a jar and allow to cool for 10 minutes. Caramel will thicken with time.

Assemble the Black Sesame Caramel Cornflakes

  • Measure out 2 cups of cornflakes into a large bowl. Pour 2 tbsp of caramel and sprinkle 1/2 tsp black sesame seeds over the cornflakes, stirring gently to coat evenly. Enjoy!

Notes

Use a medium heavy-duty saucepan. Avoid non-stick.
The mixture will bubble up as you add the butter and cream, so be careful.
If you notice the butter separating or if the sugar clumps up, remove from heat and vigorously whisk to combine it again.
Enjoy them as a standalone snack.
Sprinkle them over yogurt or ice cream for added crunch.
Drizzle some melted chocolate after mixing the cornflakes.
Use them as a topping for desserts like cakes and cupcakes. One time I made a roasted peach vanilla cake, topped with these caramel cornflakes and it was sooooo delish!
Gift a package of them in a pretty jar or bag. Your lucky recipient will thank you!
If you plan to snack on them over a period of time, consider dividing the caramel into smaller portions and freeze. This way, you can take out only what you need.
Omit the black sesame if you want to make them like Caramunchies!
