- Preheat the oven. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it heats. I preheated my Ooni pizza oven for 15 minutes.
- Prepare the pizza. Roll or stretch the dough into a 12-inch circle. Transfer to a pizza peel or parchment-lined baking sheet. Spread the hoisin sauce evenly over the dough, leaving a small border around the edges. Sprinkle the mozzarella over the sauce, then top with sliced mushrooms and char siu. Sprinkle a little more cheese on top.
- Bake the pizza. Bake for 12–15 minutes or until the crust is golden and the cheese is melted and bubbling. I cooked my pizza in the Ooni pizza oven for 2 minutes with a quarter turn every 30 seconds.
- Serve and garnish. Drizzle with your favourite hot sauce, sprinkle with green onions or chives, then slice and serve immediately.
Notes
Use low-moisture mozzarella to prevent a soggy pizza.
Pat mushrooms dry if they've been washed to reduce excess moisture.
Don't overload the pizza with toppings so the crust stays crispy.
Add the hot sauce after baking to keep its bright flavour.
Let the pizza rest for 2–3 minutes before slicing.
