Chinese Garlic Green Beans

These Chinese garlic green beans are a must! No special sauces are required and it is so simple to make - using garlic and salt. You will definitely want to recreate this restaurant dish at home!

Ingredients
  

  • 1.5 lbs green beans trimmed, washed and dried
  • 10 cloves garlic minced
  • salt to taste, about 3 pinches
  • oil for frying

Instructions
 

  • Wash and dry green beans. Line up beans in the same direction and trim off the stems.
  • Finely mince the garlic. Set aside.
  • Add enough oil to a pot just enough to submerge the beans. Once the oil is hot, fry green beans in batches for 45-60 seconds or until the skin starts to blister. Remove and drain on paper towel lined plate.
  • On medium heat, add in minced garlic with some oil. Turn off heat once the garlic starts to change colour. Add in flash fried green beans. Season with salt. I use about 3 large pinches of salt. Taste and add more if needed. Toss altogether. Plate and enjoy!

Notes

Be careful when cooking the garlic. It can turn golden very quickly in hot oil and it also continues to cook in residual heat. Stirring constantly cooks the garlic evenly.
For a healthier option, you can boil the beans until they are bright in colour. Saute the garlic, then toss in the drained green beans and season with salt.
