Miso Mushroom Grilled Cheese Sandwich

This Miso Mushroom Grilled Cheese Sandwich layers sautéed mushrooms glazed in white miso with gooey cheese and fresh scallions, then grills it all between slices of buttery, crisped bread.

Ingredients
  

  • 1 cup mushrooms sliced, any kind
  • 1 tbsp miso paste white
  • 1 stalk green onion thinly sliced
  • salt and pepper to taste
  • 1 tbsp salted butter or oil, for grilling
  • 4 slices bread
  • ½ cup cheese grated, any kind

Equipment

  • Knife
  • Cutting board
  • Cast iron pan or non stick
  • Cheese Grater
  • Spatula

Method
 

  1. Sauté the mushrooms: Heat neutral oil in a pan over medium heat. Add mushrooms and cook until they release moisture and begin to brown (about 5–7 mins). Stir in miso paste. Add green onions, salt and pepper to taste. Mix until the mushrooms are evenly coated in a glossy glaze. Remove from heat and set aside.
  2. Assemble sandwiches: Lay out your bread. On one side of each slice, lightly butter or oil for grilling. On the inside, layer cheese, miso mushrooms, and another layer of cheese if you like it extra gooey.
  3. Grill: Heat a nonstick or cast iron pan over low to medium heat. Place the sandwich butter-side down and press lightly. Cover pan with a lid and grill for 3–4 minutes per side, until golden brown and cheese is melted. Repeat for the other sandwich.
  4. Serve hot: Slice diagonally, serve, and enjoy that cheesy umami magic!

Notes

Grill over medium to low heat. You don't want the sandwich to burn before the cheese melts.
Use a lid while grilling to help the cheese melt faster.
Grated cheese will melt faster than sliced cheese.
Press the sandwich lightly with a spatula to get that crispy, golden crust.
Use a neutral oil if you don't want to use butter.
