Ingredients

  • 4 tbsp butter salted
  • 8 cups mini marshmallows divided
  • 1 tsp vanilla extract
  • 6 cups crispy rice cereal such as Rice Krispies

Instructions

  • Line a 9x9 inch baking dish with parchment paper. Spray paper lightly with cooking spray.
  • Melt better in a large pot over medium heat. Add 7 cups of marshmallows and stir, until melted and smooth, about 5 minutes. Remove from heat and stir in the vanilla until blended.
  • Add cereal and the last remaining cup of marshmallows to the pot. Stir with rubber spatula until cereal is evenly coated. Transfer to the baking dish. Lightly wet fingers and gently spread into an even layer. Decorate with toppings if using. See note below.
  • Let sit at room temperature until firm, about 1 hour. Cut into 16 squares. Store treats at room temperature in an airtight container for up to 3 days.

Notes

To decorate these treats, top with sprinkles or chocolate chips or candy-coated chocolates while still warm, gently pressing so they adhere.
To freeze, place in layer separated by wax paper in an airtight container. Freeze for up to 6 weeks. Let stand at room temperature for an hour before serving.
