Ingredients
  

  • 1 tbsp salted butter
  • 2 cups mini marshmallows divided
  • 1.5 tsp furikake seasoning
  • 1.5 cups crispy rice cereal such as Rice Krispies
  • 4 sheets Nori seaweed optional, for garnish

Instructions
 

  • Melt better in a large, heavy bottom pot over low to medium heat. As it melts, it will start to foam. Stir the butter occasionally to ensure even cooking. It will turn from a pale yellow to a golden hue to a deep amber with small browned bits at the bottom of the pot. Be cautious not to let it go too far, as it can quickly turn from browned to burnt.
  • Add 1.5 cups of marshmallows and stir, until melted and smooth, about 5 minutes. Remove from heat and stir in the furikake seasoning until blended.
  • Fold in cereal and the last remaining ½ cup of marshmallows to the pot. Stir with rubber spatula until cereal is evenly coated.
  • Grease a triangle-shaped mold or your hands with water to prevent sticking. Using a spoon or your hands, press the mixture firmly into the mold, shaping it into triangular onigiri.
  • Wrap a thin strip of nori seaweed around the base of each onigiri for authenticity and flavour. Store treats at room temperature in an airtight container for up to 3 days.

Notes

Start with a small amount of furikake and adjust according to your taste preference.
Be cautious not to let the browned butter go too far, as it can quickly turn from browned to burnt.
When combining the melted marshmallows with the cereal, mix gently but thoroughly to ensure the cereal is evenly coated. You want to avoid crushing the cereal too much.
Avoid over mixing at the end. You want it to come together and have pockets of goo!
Work quickly to shape the treats before the mixture begins to set. The mixture will become more difficult to mold as it cools.
Avoid storing them in the refrigerator, as this can cause them to become overly hard and lose their crispiness.
