Thai Basil Fried Rice

Spicy, fragrant and flavourful fried rice that comes together in a pinch!

Equipment

  • Frying pan or work non-stick
  • Spatula

Ingredients
  

  • ¼ cup oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 2 tbsp oil
  • 10 shrimp raw, deveined, shell off
  • 1 onion chopped
  • 4 garlic cloves minced
  • chilli pepper to taste
  • 1 red bell pepper diced
  • 4 cups cooked rice day old
  • 2 eggs whisked
  • 1 cup Thai basil leaves

Instructions
 

  • Combine oyster sauce, soy sauce, fish sauce and sugar in a small bowl. Set aside for later.

  • Heat oil in a wok or a frying pan over medium to high heat. Saute shrimp until cooked. Season with salt and pepper. Set aside the shrimp.
    10 shrimp, 2 tbsp oil
  • Saute onion and garlic until aromatic. Add in peppers and stir fry for a minute. Add the rice and stir fry sauce. Mix until it is well combined and the rice is evenly coloured. Create a well in the center, add eggs and scramble the eggs until cooked. Toss through the shrimp and Thai basil. Remove from heat.

Notes

Omit or use less chilli for a milder dish.
