My favourite part is the silky, luxurious egg sauce because it is gently poured over the golden fried rice. The egg sauce adds a depth of flavour and a luscious, custard-like texture. Seriously, the sauce is the star of this dish!

How to Make Golden Fried Rice with Shrimp and Egg Sauce

Let’s make this dish!

Cook the rice. Mix the rice with egg yolks, salt, white pepper and turmeric until every grain of rice is coated. There should be no lumps or chunks of rice. In a pan over medium heat, heat some oil and saute onions until translucent. Add in rice and stir fry for 2 minutes. Season with soy sauce as needed. Place rice on a plate.

Cook the shrimp and egg sauce. Marinate the shrimp with a pinch of salt and sugar. In the same pan over medium heat, heat some oil and saute some garlic for 30 seconds until fragrant. Then, add the shrimp until half cooked. Pour in chicken broth and Shaoxing wine and allow to boil. Stir in peas, white pepper and soy sauce. Mix corn starch with water and continuously stir into boiling broth until thickened. Add egg whites and stir three times to create beautiful swirls.

Assemble the dish. Pour shrimp with egg sauce over golden fried rice. Enjoy!

Storage and Reheating Tips

The Golden Fried Rice with Shrimp and Egg Sauce refrigerates well in an air tight container for up to three days. Reheat in the microwave.

I do not recommend freezing this dish.

Make Ahead Options

You can saute the shrimp ahead of time and leave it in the fridge for up to 3 days then toss together with the squid ink pasta and sauce when you are ready to eat.

You can marinate the chicken overnight and cook the following day. This will give it a boost of extra flavour.

Recipe Tips

Have all your ingredients prepped and ready before you start cooking. This includes whisking eggs and measuring the sauce ingredients out. Stir-frying is a quick process and having everything ready will make it smoother. Plus, you don’t want to risk overcooking the shrimp. Alternatively, cook the shrimp first and set aside then, add it back to the finished egg sauce.

The best way to control heat and moisture when stir frying rice is to cook in smaller batches and to use cold, day old rice.

Mix yolks into rice until every grain of rice is well-coated. There should be no lumps or chunks of white rice.

To create the beautiful swirl effect of the eggs, pour in the beaten egg whites and run your wooden spoon or chopsticks three times.

Throughout the cooking process, taste your dish to adjust the seasoning. Add more soy sauce, salt, or other seasonings as needed.

  • 2 cups cooked jasmine rice cold, day old
  • 4 egg yolks
  • ¼ tsp salt

  • 300 g shrimp shells removed, deveined, 16/20 size

  • 3 dashes white pepper
  • 1 tbsp soy sauce
