You won’t regret making this croissant with silky lava custard. Even my mom asked me for the recipe! I first had this sweet and salty combo when I was in Montreal. It was the perfect balance of sweetness and salt. I instantly wanted to recreate it as soon as I got home.

Ingredients

Duck eggs: You can buy fresh whole duck eggs like I did and reserve the whites for a different use.

Unsalted butter: The yolk is already salty. No additional salt is required.

Icing Sugar: Balances all the flavours together. Icing sugar gives the filling its sweetness without the texture of sugar granules

Custard powder: This gives the molten, lava effect of the filling and enhances the creamy consistency.

Milk: For a creamier filling, you can use evaporated milk or homo milk. I used 2% as this was what I had on hand.

Croissants: Day old croissant works best. I slice them in half but I don’t cut them all the way.

Salted Egg Yolk Lava Croissant Options and Substitutions

  • I highly recommend using custard powder as it enhances the milk flavor. If you don’t have custard powder, substitute it with corn starch.
  • Using a milk with a higher fat content works best. I did use 2% for this recipe and it was still okay. I wouldn’t use 1% or skim milk.
  • You can use full size or mini croissants for this recipe. Just make sure your store bought croissant is made with butter. The butter in the croissant ensures that this will turn out flaky.

How to Make Salted Egg Yolk Lava Croissant

Let’s make this dish!

Cook the duck eggs. In a medium pot, boil water over medium heat. Gently place eggs in pot and simmer for 10 minutes. Peel and remove yolks. Cut salted egg yolks to fine pieces.

Make the filling and slice the croissants in half. Mix the butter with icing sugar. Add yolks and custard powder. Slowly stream in milk until mixed thoroughly. Refrigerate while you cut the croissants. I didn’t cut through entirely.

Assemble salted egg yolk croissants. Depending on the size of your croissant, spread 2 tbsp of filling in the center. Optional, place a dollop on top of the croissant. Bake at 350F for 2 minutes. Enjoy while it’s warm!

Storage and Reheating Tips

Store leftovers in an air tight container in the fridge up to three days. Warm the croissants up before eating. I prefer to put them in a toaster oven or air fryer for a minute but it does get messy as the filling will start oozing out.

Make Ahead Options

You can make the filling ahead of time and leave it in the fridge for up to 3 days. The filling will harden in the fridge. Leave at room temperature for 30 minutes until it is spreadable. Bake for 2 minutes.
